The Carcass Value Optimization Process
OptiProfit - Carcass Optimizer provides optimal carcass fabrication solutions for packers. Our Carcass Optimizer analyzes the subprimals of each carcass type by weight, yield grade, quality grade, and sex/breed while simultaneously analyzing current pricing. It then identifies the combination of subprimals that represents the greatest value for that particular type of carcass. The Carcass Optimizer also uses incremental cost-of-fabrication and other expenses related to specific cuts as part of its optimal solution analysis, providing the most complete optimization possible.

Creating a Value Optimized Production Plan
Knowing the most valuable fabrication for specific types of carcasses is only half of the solution in deriving the greatest amount of value from a carcass. A production plan must be created for available carcasses that meets the requirements of forward sales, limits the production of excess product, and minimizes the number of changes in fabrication.

Carcass Optimizer combines the optimum carcass fabrications, the carcasses available for fabrication, and forward sales and inventory data and produces a production plan than retains the greatest value across all carcasses. It does this by ordering these carcasses, inside of these constraints, to provide the greatest value.

For example, an 825 pound choice steer carcass can be used to fab either a Top Butt Center Cut (184) or a Boneless Top Butt Center Cut (184B). The optimum value is in fabricating the 184 rather than the 184B but, if there are forward sales that require the fab of 184B then the optimum carcass type to use would result in a gain of $8 per carcass versus a less optimum carcass type. These value opportunities exist throughout the creation of the production plan process across the various carcass types.

Expected Profit Gains
Using Carcass Optimizer typically results in a profit improvement of from $50 to $100 per carcass, depending on current pricing, forward sales, and product demand.

Using Carcass Optimization with Forward Sales
Determining what products to sell on a forward basis and the appropriate product pricing is a difficult process. Less than optimum decisions can result in a significant loss of potential value. Carcass Optimizer allows you to determine the profitability of forward sales by combining future pricing with the expected carcass types that will be available at the time of order fulfillment. This allows your sales staff to focus on forward sales of those subprimals providing greatest value.
